This trend is expected to continue over the next few years as India seeks to increase exports of its culinary wonders. Increased competition in international markets will also lead to greater export earnings for the food industry in India.
With migration and exposure, has led to the creation of new dishes with flavours borrowed from other countries or regions of India. Examples of such hybrid dishes include vindaloo from southern India, balti from northern India, and tandoori from western India.
In addition to shifting demographics, the nature of food consumption is changing. Consumers want healthier options, and they are willing to pay higher prices for them. Consumers are demanding more convenience (such as ready-to-eat meals) and less preservatives (like artificial colors and flavors).

Foodies seek out authentic regional meals wherever they may be from-Indian or imported. Consequently, the diversity of Indian foods is increasing due to both innovation and global travel.
