Dry fruit Gujiya bites
These delicious & perfectly individually sized Gujiya bites are stuffed with dried fruits and nuts and are naturally sweetened and yes no sugars added.
- Deseed the dates. If the dates are not soft and moist, soak them in milk for about -10 minutes
- . Deconstruct the soften dates.
Add the almonds, cashews, pistachios & walnuts in a mixer and pulse them. - in a mixing bowl and add the dates, nutmeg powder, cardamom powder& saffron milk.
Mix well.
Scoop out a teaspoon of the mixture into each fill shell and garnish with a raisin or a nut of your choice.

- In a pre heated oven add quinoaand bake it 6-8 minutes ( alternatively you can roast for 10minutes until golden brown
- Blend dates , almonds and cocoa powder in a blender
- Take some of the dough in your hand. If it firmly sticks together, proceed with the rest of the recipe.
- Add the roasted quinoa and mix it thoroughly
- Give it a desired shape of your choice.
- Roll on pistachio powder or shredded coconut before serving

- Bring the milk to boil. Add lemon juice to the boiling milk and continue boiling it on slow heat until the milk curdles completely.
Pour it into a cheese cloth. Rinse it thoroughly under cold water.
Hold the cloth tightly and squeeze out all the excess water. - Once the water is drained ,Knead the dough for 5-10 minutes until it’s soft and smooth
Chenna is ready.
For Garnishing
1.Soak saffron strands in water for a couple minutes.
2.Spread a layer of Chenna on the pineapple slices.
3.Garnish with dried fruits or nuts of your choices.

- Heat a heavy bottomed pan, dissolve jaggery with 2 tablespoon water till it becomes 1 string consistency.
- When the right consistency is set ,turn off the gas.
- to check if the syrup is ready take a bowl with water When the jaggery water becomes little thick, take little bit of syrup in a spoon and add it to the bowl of water. it should solidify immediately .
- Mix the jaggery syrup with the puffed rice.
- mold them into a mini donut pan & and let set..
- Gently pop them out and put aside.

- Pulse the dried apricots ,Oats and coconut powder in the food processor to process it till it comes together .as a mixture.
- Take a small amount of mixture and roll it into a small ball. .Keep your hands moist to avoid stickiness
- Roll each ball in the coconut to coat.
